Methodology
Our process — four phases of restaurant growth support.
Our engagements follow the same architecture whether you are a single-unit bistro or a seven-unit group. What changes is depth and duration — not the discipline.
Tell us your vision.
Two weeks on the floor and in the books.
We sit through Friday and Saturday service. We read the trailing 24 months of P&L. We interview the GM, the chef, the bookkeeper, and three line cooks. By the end of week two you receive a 40-page audit memo with the three to five highest-leverage interventions ranked by ROI and difficulty.
Weeks 1–2
We find the gaps and bring the right resources.
A blueprint, not a slide deck.
The growth blueprint is a 60-page operating manual tailored to your concept, market, and labor pool. SOPs, vendor strategy, menu engineering, hiring plan, capital structure, and a 12-month milestone map. Every recommendation is sequenced and assigned to an owner.
Weeks 3–6
We build the plan and stay involved.
Our partners run point on implementation.
We do not hand over a binder and leave. A managing partner spends one to two days per week onsite during the implementation window, sitting in management meetings, retraining the floor, renegotiating vendor contracts, and onboarding new hires alongside your GM.
Months 2–6
